Sorry for the dumb question, but when it says "HTML5" version, what is the underlying technology they are using, if it's not flash?

JavaScript, HTML, and CSS. The HTML includes the canvas, video, and audio elements. There's some "behind the scenes" info at http://www.cuttherope.ie/dev/

HTML, CSS, JavaScript.

Version 5 of the HTML specification (colloquially known as HTML5) has a number of new features that support Flash-like interactive multimedia content.

See http://en.wikipedia.org/wiki/HTML5 and http://en.wikipedia.org/wiki/Canvas_element, for example.
